Oven Roasted Tomatoes (aka Sun Dried Tomatoes)

These are so easy to make and SO much cheaper than buying sun dried tomatoes at the store! They freeze well, and you can process them to make a delicious tomato pesto.

2 lbs roma tomatoes
4 tablespoons olive oil, divided
2 teaspoons Montreal Steak seasoning
2 tablespoons garlic, minced
1 teaspoon rice wine vinegar
2 teaspoons balsamic vinegar
1/2 teaspoon salt
1 1/2 teaspoons sugar

Preheat oven to 325 degrees.
Cut the tomatoes into thin-medium wedges, or quarters if small. Spray a large jelly roll pan with cooking spray and cover it well with tin foil.....
