Pineapple Fried Rice. Some food pairings were just meant to be together, and this is one of them. Get your sweet, crunchy and tropical hit right now!

1 cup basmati rice (1 cup = 200g)
1 handful cashews
1 cup pineapple chunks, canned (or use fresh pineapple!)
1 banana
1 tbsp coconut oil (other oil will do as well)
2 red onions
1 red chilli pepper
0.5 cup coconut milk (0.5 cup = 125ml)
1 bunch cilantro, fresh (parsley can be used as an alternative)

Optional:
½ tsp curry powder
Use leftover rice or cook a new batch according to package instructions. Roast the cashews on low to medium heat in a pan without fat until they start to brown, then remove them. Roughly chop the pineapple...
