Pinto Bean Salad

A very tasty Mexican style side dish.

1/4 cup vegetable oil
2 Tablespoons fresh lime juice
1/2 teaspoon salt
2 cans pinto beans, drained (15 1/2 oz each.)
1 Tablespoon cumin
1 teaspoon fresh garlic, minced
1/4 teaspoon pepper
lime slice for garnish
In a large bowl whisk oil, lime juice, cumin, garlic, salt and pepper with a fork. Add beans and toss to coat. Cover and chill. Garnish with lime slices. Allow to stand for at least 2 hours for best flavor.
