Purple Kale Sweet And Salty Salad

This salad is full of iron. The purple kale has a sweeter taste than the green kale, but it's just as good for you. This salad can be served as an appetizer before your turkey dinner at Christmas time. New recipes that change tradition sometimes create new holiday favorites! We eat a lot during the holidays and adding this healthy salad to the menu will not only be wonderful for the taste buds, but not too bad for the waistline! Enjoy!

3 cups of chopped purple kale
1 cup of cooked bacon (cut into bite size pieces)
1 cup of whole rasberries
1/2 cup slivered almonds
1/4 cup shallots (finely chopped)
1/4 cup olive oil

Cut bacon into 2 inch slices, and cook, then set aside. Put 1/2 cup of rasberries and the olive oil in a pan, and heat at medium heat for 10 minutes. Crush the rasberries to create a sauce. Set aside to cool. This may sound strange, but massage the kale until the color gets slightly darker, before chopping. This will bring out the kale's sweetness and natural flavors. Chop the kale up into one inch pieces. Put the kale into a large bowl, add the cooled bacon pieces,1/2 cup of rasberries, shallots and the almonds. Pour the sauce over the salad, and mix well. Refrigerate 30 minutes before serving. Mix again and enjoy.
