Quick Corn and Tomato Salsa

A quick easy salsa recipe that can be used for snacking or a topping for fish or chicken.

1 cup of frozen (thawed) or canned corn
1 small can of diced mild green chills
1 cup of diced cherry tomatoes
2 teaspoons of fresh cilantro, chopped
2 dashes of Tabasco Chipotle
Combine all ingredients in a bowl and allow to sit for 20 minutes

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
