Roasted Potatoes with Cilantro Pesto

Simple side dish for all meal types. Roasted potatoes with Cilantro pesto is so much fun to make and it will be perfect for Lunch or Dinner meals.

- 2 Bunches of Cilantro
- 1/4 cup of Extra Virgin Olive Oil
- 1/4 cup of chick peas from can (skins removed)
- 2 tsp of uncooked quinoa
- 2 tsp of salt
- 2 tsp of whole peppercorns
- 2 tsp of lemon juice (or to taste)
- 3 Jalapenos or Thai Chili
- 1/4 cup of water (optional)
- 3 medium sized potatoes
- 3 Tbsp of extra virgin olive oil (or to taste)
