Skillet Beach Shrimp with Sauteed Veggies and Rice

This is a fresh, easy dinner for nights when you need a quick, healthy meal. Tender shrimp and veggies with Italian dressing over rice - mmm to the max!

1 lb large shrimp (I used frozen, cooked)
1/2 cup light Italian salad dressing
1/2 cup cooked rice
1 medium zucchini, sliced
1 medium yellow squash, sliced
3 medium carrots, sliced
1 cup mushrooms, sliced
1 tablespoon butter
more cooked rice, for serving
