A simple southern dish fried green tomatoes is delicious, but why not make it healthy and bake the green tomatoes, they are delicious and perfect for a summer treat! enjoy!

One large green tomato (or two smaller ones), sliced
1 1/2 teaspoons NRG egg replacement powder + 2 tablespoons warm water (or another egg substitute equivalent to one egg)
1/4 cup nondairy milk, plain
1/4 cup unseasoned breadcrumbs
1/4 cup vegan parmesan (recipe)
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Cooking spray
