Skinny Shiitake-Black Bean Burgers w/ Spicy Aioli (Vegan, Vegetarian)

These Skinny Shiitake- Black Bean Burgers are one of my favorite recipes of all time- and super easy! Why buy pre-packaged burgers (packed with who-knows-what) when you can make these fast, fresh burgers that taste better!?

1 tablespoon olive oil
1 cup shiitake mushrooms, stems removed and diced very fine
15-ounce can unsalted black beans, drained and rinsed
1/4 cup finely chopped red onion
1 tablespoon minced fresh garlic
2 teaspoon lower-sodium soy sauce
1/2 teaspoon crushed sea salt
1/4 teaspoon freshly ground black pepper
1/4 cup panko breadcrumbs
1 flax egg (1 tablespoon ground flax + 3 tablespoons water) OR 2 egg whites
cooking spray
4 skinny hamburger buns
1/2 cup veganaise
2 cups baby arugula
2 Roma tomatoes, sliced

1 tablespoon Sriracha (hot chile sauce)
1-2 teaspoon Tabasco green pepper sauce (or more, if you're obsessed like me)
1 teaspoon fresh lime juice
