Nothing says "fall" quite like a cozy bowl of savory Pumpkin Chili! This healthy and easy dinner recipe is the perfect dish to serve on Halloween, but it's also a simple option for busy weeknights. Use ground turkey or ground beef, and prep a big batch on the stovetop or in the Crock Pot. Serve the turkey pumpkin chili is with cornbread, pumpkin muffins, or crunchy tortilla chips!

2 lbs. ground turkey or ground beef
1 onion ( diced )
1 (15 ounce) can pinto beans ( rinsed and drained )
1 c frozen corn
2 (14.5 ounce) cans fire-roasted diced tomatoes ( undrained )
1 (15 ounce) can pumpkin
2 tablespoons chili powder
½ teaspoon pepper
1 (½ teaspoons) salt
1 T olive oil
2 t minced garlic
8 oz tomato sauce
1/2 c chicken broth or beef broth
1 1/2 t cumin
1 T brown sugar
1/4 t cayenne

In a large skillet, cook beef over medium heat until no longer pink. Drain fat off of beef and transfer meat to a 5-6-quart slow cooker.
