Spinach and mushroom quinoa.

Ingredients:
1 lb mushrooms, sliced thinly
3 garlic cloves, minced
1 tbsp unsalted butter
1 tbsp olive oil
5 to 10 ounces fresh spinach
2 cups cooked quinoa
salt and pepper
