Sweet Superfood Salad with Poppyseed Dressing (Vegan, Vegetarian, Gluten Free)

I am just in love with this sweet and crunchy salad. It’s super healthy and packed with important nutrients.

15-20 small brussel sprouts, stems removed, trimmed and chopped thin
½ head red cabbage, chopped (white parts removed)
1 bunch green kale, chopped (stems removed)
1 cup dried sweet cherries, chopped
1 cup roasted unsalted pepitas (small pumpkin seeds)

Poppyseed Dressing
2 tablespoons dijon mustard
4 tablespoons Veganaise
2 teaspoons lemon juice
2 teaspoons poppy seeds
4 tablespoons rice vinegar
4 teaspoons maple syrup
In a large bowl, combine brussel sprouts, red cabbage, kale, sweet cherries, and pepitas. To make dressing, combine all dressing ingredients in a small bowl and stir with a small whisk until blended....
