Three Bean Chili

A delicious and filling chili.

1 can pinto beans
1 large can homestyle baked beans
1 can black beans
1 med onion (diced small)
1 carrot (diced small)
1 can of corn
1/2 green peppers (diced)
1 can of diced tomatoes
1 tsp chili powder
1/4 tsp parsley
1/2 tsp oregano
1 tsp basil
dash of salt
dash of pepper
1. Begin cooking the pinto beans to soften. Put in a pot with water. Allow to boil and then let simmer for 20 minutes 2. While beans are simmering, chop onions and begin sauteing in oil in a pot. (This is the pan the rest of your chili will go in. 3. Chop other carrots and green pepper and add to the onion. Mix for 5 minutes. (They wont be soft yet but will be cooking for 30 more minutes to allow to soften.) 4. Drain and mix in pinto beans. 5. Mix in the other beans, carrots and tomatoes. 6. Once mixed together, add in the spices in. Bring to a boil and then simmer for 30+ minutes.
