This is a very fresh-tasting side dish that uses your garden produce. It is simple, but has great flavors!

2 ripe tomatoes, chopped
1 cucumber, peeled and chopped
2-4 tablespoons fresh chives or green onion tops, minced
1/4-1/2 cup seasoned rice wine vinegar
Combine all ingredients in a bowl and give it a good stir. Eat immediately or put it in the fridge for up to one hour so the flavors can marry.
