Vegan Almond Butter Chocolate Chip Cookies

Vegan almond butter chocolate chip cookies combine my two favorite ingredients EVER. Made with just 5 ingredients, these healthy cookies taste so rich and satisfying while being gluten free and naturally sweetened.

2 1/2 c whole grain rolled oats, ground into flour
1/2 c date paste - I use about 8 dates blended with 1/2 c hot water, then measure out 1/2 c paste
1/2 c almond butter - I used my homemade almond butter recipe, but store-bought is fine too
2 flax eggs - 2 tbsp ground flaxseed in a bowl with 6 tbsp water, set in the fridge for 15 minutes prior to mixing into the dough
1/2 c vegan chocolate chips - I always use Pascha
