Vegan Berry Parfait

Berry easy and tasty parfait. Use strawberry, raspberry, blueberry, or a combination of the three.

1½ cup strawberry chunks
2 tablespoon maple syrup
¾ cup macadamia nuts
¾ cup cashew
1 cup melon flesh
2 tablespoon maple syrup

¾ cup cashew

Soak macadamia nuts and cashew for 1-2 hours. Drain.
Put macadamia nuts, cashew and melon in a blender and blend until smooth.
Mix maple syrup and strawberry. You can use a blender or mix with a spoon for chunky texture.
Alternating between the strawberry mixture and the nut mixture, place them in layers into a dessert cup or tall glass.
Garnish with a slice or whole strawberry.
Refrigerate for few hours or serve immediately.
