This is a recipe for vegan and clean eating black bean soup.

2 cups dry black beans
6 cups water
2 tbsp olive oil
1 yellow onion chopped
1 red or green bell pepper chopped
1 1/2 tsp cumin
1 1/2 tsp chili powder
4 ounces diced green chilis
1 tsp minced garlic
15 ounces Diced Tomatoes canned or fresh
8 cups vegetable broth
coarse salt to taste
vegan sour cream to top with
Diced Tomatoes to top with
cilantro to top with
Diced Bell Pepper to top with
Diced Onion to top with
Diced Avocado to top with
Salsa to top with
