This vegan overnight banana buckwheat cereal is a super easy, healthy breakfast option that’ll take you no time at all to prep! Made with 3 healthy ingredients and gluten free.

1/2 c buckwheat flakes - there are also whole groats, but I think those require cooking. I use the Bob's Red Mill brand that's called buckwheat hot cereal (linked below!)
1/2-1 c water or almond milk
1 ripe banana, mashed
Combine all ingredients in a bowl/tupperware, and set in the fridge overnight or at least 2 hours. The cereal will absorb a lot and be very thick - feel free to add more almond milk before serving.
