Vegan Tomatillo Sandwich

Simple raw vegan snack, easy to make and pretty to the eyes.

8 tomatillos
¼ cup grated apple
¼ cup grated zucchini
2 tablespoon almond butter
12 goji berries (optional)
Mix grated apple, grated zucchini and almond butter to make filling. Trim off the top and bottom of tomatillos. Cut horizontally into slices. Put some filling between two slices of tomatillo. Place the sandwiches on plate, and top with goji berries (optional).
