60
1/2 cup butter
2 1/2 cups powdered sugar
4 1/2 cups shortbread cookies (butter biscuits)
1 1/2 cups coconut flakes
7/8 cup strawberry juice (or any other red-colored juice)
1/2 cup apple or orange juice
1/2 cup chocolate chip (crushed)
food coloring (red and green)
1. Beat butteer and powdered sugar until fluffy. Add coconut flakes and shortbread cookies (minced). Knead the mixture using your hands. This is the basic mixture. 2. Divide the mixture into two parts: 1/3 and 2/3. 3. Add strawberry juice and red food coloring into the 2/3 part. Add as much food coloring as you want the "watermelons" to be "ripe". Set aside 5 tablespoons of this red mixture and add the crushed chocolate chip in the remaining red mixture. This will play the watermelon seeds. 4. Add apple juice and some green food coloring into the 1/3 part of the basic mixture. 5. So, you now have 3 mixtures: red one , red chocolate chip and green one. 6. Form a cherry-sized balls from the red mixture. You should get 15 balls. 7. Take the red chocolate chip mixture and wrap each ball. So, you now have 15 bigger balls - watermelon flesh with seeds. (see photos) 8. At the end, wrap each of the bigger balls with the green mixture, that is, give each watermelon a "rind". 9. Put the cookies into a fridge for half an hour and then cut them into 1/4 pieces. So, at the end, you get 60 cookies.
