This quick and easy, gluten free Shakshuka recipe has a little, spicy Mexican twist! It’s a lower carb, healthy and whole30 compliant dinner or breakfast!

Ingredients

1/2 tablespoon avocado oil
1/2 red peppers ( large, sliced )
1 1/2 teaspoon taco seasoning
1 Can (14 oz) Canned Diced Tomatoes
2/3 cups salsa
1 tablespoon tomato paste
4 eggs ( large )
salt and pepper
1/2 avocado ( large, sliced )
cilantro ( for garnish )
green onion ( sliced, for garnish )

Directions


For the cauliflower rice:

3    cups    cauliflower ( cut into florets )
1 1/2    teaspoon    avocado oil
1/3    cups    cilantro ( minced )
Lime juice salt and pepper
