Baked skinny fries flavored with Cajun seasoning for a spicy kick. Delicious, simple to make, and healthier than the restaurant version, these crispy fries are so very addictive.

1 medium to large russet potato

1 ½ teaspoon olive oil

1 tablespoon cornstarch

1 teaspoon Cajun/Creole seasoning

½ teaspoon parsley, chopped (optional)
