It's Meatless Monday Yummies. We love Meatless Monday, it always challenges us to think outside the box and imagine elaborate flavor combinations we've never tried before. Today's Meatless Monday recipe is a hearty, fall flavored salad that can be served alongside a main course or stand on its own. 2 cups of arugula
1/2 blood orange sliced then halved
1 tbsp of shelled pistachio nuts
1 tbsp of dried cranberries
1 tbsp of olive oil
1 tsp balsamic vinegar
1/2 blood orange sliced then halved

Plate the arugula
Top the arugula with the orange slices
Sprinkle the pistachio nuts and dried cranberries on top
