Bright Summery Rice Salad

Sometimes in the warm weather you just don't feel like having a hot meal. This is a nice side dish for those days.

2 (4.4 oz) cups of roasted chicken rice, microwaved and then allowed to cool
2 finely chopped carrots
1 cup frozen corn, thawed or you could use up some leftover fresh corn on the cob
2 Tablespoons chipped sun dried tomatoes
1 Tablespoon olive oil
juice from 1 lime
dash of garlic powder
salt and pepper to taste
Mix together all ingredients and let stand for a couple of hours for flavors to blend.
