Bruschetta is a quick and easy appetizer! A mixture of garden-fresh tomatoes, basil, Parmesan cheese, balsamic vinegar, and spices on top of grilled slices of french bread! It's an easy go-to recipe to use up your fresh tomatoes from your garden and the perfect party appetizer!

8 roma tomatoes
1/3 cup fresh basil
1/4 cup Parmesan cheese ( shredded )
2 cloves garlic ( minced )
1 tbsp balsamic vinegar
1 tsp olive oil
1/4 tsp kosher salt
1/4 tsp ground black pepper
1 loaf French bread

My caramelized red onion chutney is thick, has a dark caramel colour and a sticky jam-like consistency. You can have it hot or cold, and it goes well with grilled cheese, soups, and even pizza!

Onion Chutney:
10 medium red onions
3 tbsp olive oil
4 bay leaves
1 tbsp mustard seeds or powder
2 tbsp ground black pepper
2/3 cup dark brown sugar
