This is a homemade version of the Crushed Lentil Soup served at most Middle Eastern restaurants. It's SO healthy, fresh and easy!

2 tablespoons olive oil
1 medium sweet onion, finely chopped
4 cloves garlic, minced
1 quart (32-ounces) vegetable broth
2 cups water
2 cups red split lentils, uncooked
1 small pinch saffron
1 teaspoon coriander
1 teaspoon cumin
1 teaspoon pepper
1 1/2 teaspoon salt
1/2 teaspoon red pepper flakes
2 bay leaves
1/4 cup fresh squeezed lemon juice
