For these tasty treats I’m using leftover “hard simmered” eggs from Easter. This explains why I have only 4 eggs to use hence the 8 pieces. Doubling or tripling the recipe would be very easy to do. With Cinco de Mayo in mind, The Hubby suggested a new spin on deviled eggs. He said, “how about the flavor of Huevos Rancheros?”. “OK, sounds good”, I said. Food Processor Ingredients:
4 Hard “Simmered” Eggs, halved and yolks removed
2 Tablespoons Light Mayo
1 Tablespoon 0% Plain Greek Yogurt
1 teaspoon Dijon Mustard
1 teaspoon Ground Cumin
1-2 teaspoons Chipotle Sauce. I used Tabasco brand, but use what you like.
Juice of 1/4 Lemon
1 Green Onion, finely Chopped
2 Tablespoons Black Beans, if canned, drain and rinse. I had these leftover too.
1-2 Tablespoons Pimento or Roasted Red Pepper, finely Chopped. Hint: I used the pimento out of pimento stuffed Green Olives! ;)

Zing Factor:
1/4 teaspoon Tex Mex Seasoning of your choice
Food Processor Prep: Add the Egg Yolks and the other ingredients up to and including the Chipotle Sauce to your Food Processor. Process until smooth, scraping down the sides as needed. Spoon the mixture...
