Early Summer Panzanella

A nice warm panzanella with fresh garden produce and a big glass of white wine and you pretty much have made heaven right there.

3 cups day-old crusty bread, cubed
3 tbsp extra virgin olive oil
4 medium tomatoes, chopped into 1-2 inch pieces
3 cups arugula
2 cloves garlic, crushed
1 tbsp diced red onion
2 tbsp red wine vinegar
