30 Minute vegetarian dinner alert! Simple nachos recipe custom created for each member of the family and baked to perfection on a sheet pan! Forget about the kids not wanting veggies on top and the husband wants his enchilada sauce and you want extra cheese. ½ bag of tortilla chips
1 15 oz. can of pinto beans or black beans, rinsed and drained
1 cup shredded Mexican blend cheese
¼ cup Enchilada sauce
½ cup chopped black olives (or ¼ cup diced)
2 roma tomatoes, diced
½ cup green onion chopped
¼ cup cilantro, chopped
Nonfat Greek yogurt or sour cream, optional
1 avocado, optional
