Your family won't even notice the missing meat in this yummy chili. Low in calories, but high in fiber, protein and taste!

1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, minced
1 carrot, chopped
1 celery stalk, chopped
2 bell peppers (any color), chopped
2 (15oz) cans petite diced tomatoes
2 (15oz) cans red kidney beans, rinsed and drained
2 (15oz) cans black beans, rinsed and drained
4 cups water
2 teaspoons cumin
1 1/2 tablespoons chili powder
Salt and pepper, to taste
