Homemade Italian Tomato Basil Soup

Here is a perfect comfort food for a cold chilly evening, I needed a pick me up, try my homemade italian tomato soup, it's sure to warm your heart

3 cloves of garlic, minced
2 tablespoons of olive oil
2 - 14 oz. cans of crushed tomatoes
1 - 14 oz. can of whole tomatoes
2 cups of stock (chicken or vegetable)
1 tsp of sea salt
1 tsp of sugar
1/2 tsp of fresh ground black pepper
1/4 cup of light cream
3 tablespoons of fresh basil, julienned
fresh grated parmesan cheese
( I like to use fresh block of parmesan cheese its so much tastier than the processed stuff)

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
