Homemade Tomato Sauce

A healthy from scratch version of classic tomato sauce.

1 tbsp extra virgin olive oil
1 medium onion, peeled and chopped
1 small carrot, shredded
3 cloves of garlic, minced
3-4 large basil leaves
1 tbsp fresh Italian parsley
5 cups seeded, diced tomatoes (if jarred no salt added)
