Kanji & payar (over-cooked rice & green gram)

Kanji&Payar is a delicious and healthy Kerala/South Indian dinner.

For Kanji
Ingredients-
Boiled rice- 1 cup
Salt

For Payar
Green gram- 1 cup
Desiccated coconut-1/2 cup
Garlic cloves- 3-4
Onion- 4
Cumin seeds- a pinch
Salt- for taste
Green chilly- 4
Turmeric powder- half tsp
Curry leaves
Oil- 1 tbsp
For Kanji Wash rice three times and put it to boil in a pressure cooker with sufficient water. Wait for at least 3 whistles. The water in which rice is boiled should not be drained out. It is very nutritious and healthy. Add salt for taste to the kanji. For Payar Pressure cook the green gram by adding turmeric powder and salt with sufficient water for at least 4 whistles. Grind together coconut,salt, cumin seeds, garlic cloves,green chillies and onion with little water. Add the paste to the green gram and cook for 2 minutes. In a sauce pan add oil and splutter mustard seeds, curry leaves, sauté 2 onions and add this to the cooked green gram. Payar and kanji is ready to serve. (Payar can also be prepared with sprouted green gram for more health benefits.)
