Miso Basil Vegetable Soup

Yummy soup with beautiful colors, so easy and so tasty.

1 tablespoon olive oil
¼ cup chopped onion
3 chopped garlic cloves
½ cup diced tomato
½ cup sliced and quartered zucchini
2 cup water
1 tablespoon red miso paste
1/2 teaspoon dried basil
Fresh basil leaves for garnish (optional)
Heat olive oil in a pot, add onion and garlic, sauté until fragrant. Dissolve miso paste in a little water. Add tomato, zucchini, water, dissolved miso paste and dried basil. Bring to a boil then simmer for 10 to 15 minutes. Serve in a bowl and garnish with fresh basil leaves.
