Raw broccoli, pistachio and coriander soup

I have never been the biggest fan of broccoli soup. I don’t dislike it; I just simply don’t opt to make it. After seeing a recipe for a raw broccoli soup though, I decided to try my hand at creating my own version (I have never been one for following recipes…). The soup was extremely creamy, slightly spicy, and had a burst of subtle acidity. Seriously delicious. Enjoy!

¼ cup cashew nuts
¼ pistachio nuts
60g broccoli
1 leek
1 tsp deactivated yeast
1 tsp wholegrain mustard
Juice from 1 lemon
1 tsp coconut oil
Pinch of salt and black pepper
Pinch chili flakes
1 small garlic clove
½ tsp spirulina
2 Tbsp fresh coriander
¼ cup sauerkraut
1 cup boiling water
Place all the ingredients into a blender. Blend on high speed for 10 minutes, ensuring that your soup is smooth and velvety. Pour into a bowl, garnish (if desired) with a little deactivated yeast, julienned...
