Red Beans & Quinoa Stuffed Mushrooms (Vegan, Gluten-Free)

These stuffed mushrooms are a great appetizer, side dish, or as a main course. They are also full of fresh ingredients, and are ridiculously healthy... vegan and gluten free!

1 cup quinoa
1 cup water
1 cup vegetable broth
18 small portobello mushrooms, stems removed and discarded (or set aside for later use)
2 tablespoons olive oil
3 cloves garlic, minced
1/2 small onion, thinly sliced and diced
1 small red pepper, diced
2 celery stalks, diced
1 teaspoon cumin
1 teaspoon smoked paprika
1/4 teaspoon ground sea salt
1/4 teaspoon freshly ground black pepper
1 (15 ounce) can kidney beans
1 tablespoon white vinegar
