4 pounds Roma tomatoes
2 medium onions, peeled and halved
5 cloves garlic, unpeeled
Olive oil
1 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
10 fresh basil leaves

Preheat oven to 350 degrees F.
Arrange the tomatoes, onion and garlic on a baking sheet.
Drizzle with olive oil, and sprinkle dried basil, salt and pepper.
Roast in the oven for 1 hour.
