Here is a great dip similiar to hummus, but instead of chickpeas its made with red bell peppers! enjoy! ?

6 red bell peppers

1 small eggplant
1-2 garlic cloves, depending on taste
4 tablespoons extra virgin olive oil
2 tablespoons white vinegar
salt and pepper, to taste
1/2-1 teaspoon dried red pepper flakes
