Slow Cooker Chicken and Vegetables

A healthy and easy dinner recipe that practically cooks itself!

1.5 lb chicken breast meat, cut into strips or to your preference
1 white onion, sliced into thick rings
2 medium carrots, cut into coins on the bias
3 stalks celery, chopped
3 cloves garlic, minced
1/2 lb. baby bella mushrooms, sliced
1 box chopped tomatoes (750g)
2 c. unsalted or low sodium chicken stock
2 c. water
1 tbsp. coconut oil
1/2 tsp. oregano
1/2 tsp. black pepper
salt to taste
If time permits, melt coconut oil in a large skillet. Season chicken with salt and pepper, then add sliced chicken breast. Sear off chicken for 5 minutes or so, then add chicken to slow cooker, with any juice or oil remaining in skillet. Add sliced vegetables over chicken, top with chopped tomatoes and finally add stock and water with remaining seasoning. Stir ingredients to incorporate. Cook on high for 4 hours or low for 8 hours.
