1 cup quinoa
8 oz. fresh or frozen spinach, chopped
8 oz. fresh or frozen corn kernels
1 can (15 oz.) red kidney beans, rinsed and drained
1 tbsp. chili powder
1 tsp. cumin
1 tsp. red pepper
sea salt and fresh ground pepper, to taste
For the Quick Lemon Dijon Dressing
Zest and juice of one lemon
2 tbsp. dijon mustard
2 tbsp. extra virgin olive oil
