Super Easy Black Beans and Rice (Vegan, Gluten-Free)

This is a super easy dish great for weeknights when you don’t have much time to cook.

1 tablespoon olive oil
1/4 cups chopped onion
3 garlic cloves, minced
1 15-ounce. can black beans, rinsed and drained
1 1/4 cups (10 ounce) cooked rice (I used Trader Joe’s ‘Brown Rice, Red Rice and Black Barley’ mix)
1/4 teaspoon ground sea salt
1/4 teaspoon freshly ground pepper
2 tablespoons distilled white vinegar
1 T. lemon juice
1 T. lime juice
3 tablespoons chopped cilantro
Green Pepper Tabasco Sauce, to taste
