Tabbouleh Style Bulgur Mint Salad

Black olives, tomatoes and mint bulgur salad.

300g/10oz coarse bulgur
2 ripe tomatoes, finely chopped
100g/3oz black olives, pitted
a small bunch of fresh mint, leaves only, chopped
a small bunch of flat leaf parsley, chopped
For the dressing:
2tbsp lemon juice
3tbsp olive oil
