Vegan Zucchini Lasagna

A healthier lasagna that's full of protein and veggies, totally vegan and GF. A great fall dish.

1 1/3 cup uncooked quinoa, rinsed and drained
2 cups vegetable broth (or 2 cups water + veg broth bouillon cubes)
2 cups simple tomato sauce
2 zucchini, washed, and cut into thin slices (like lasagna noodles) - use a mandoline if you have access to one
10 slices of Daiya Swiss-Style slices
Optional: Daiya mozza and/or cheddar shreds to add in between the layers for extra cheezy goodness.
