Soba Noodle Salad with Spicy Soy Lime Dressing

Buckwheat noodles tossed with chopped tomatoes, julienned zucchini and shredded carrots then drizzled with a spicy soy lime dressing. This tasty vegan and gluten-free Asian inspired noodle salad is simple to make and great for hot summer days.

For the Soba Noodle Salad:

1 bundle of soba noodles

½ cup cucumber/zucchini, julienned

¼ cup carrots, julienned

1 small tomato, diced

For the Spicy Soy Lime Dressing:

1 ½ tablespoons soy sauce

Juice of one lime ( about 1/8 cup)

3 teaspoons sugar, or sweetener of choice

1 teaspoon scallions, sliced

1 red chili pepper, sliced (optional)
