Deliciously spicy with hints of sweetness, these 20 Minute Spicy Thai Noodles super simple and perfect for a quick weeknight meal! (gluten free, dairy free)

Chicken:
1 tbsp coconut oil
1 pound chicken breast ( substitute with tofu or shrimp )
1 clove garlic ( minced )
1 tbsp coconut sugar
1 tbsp soy sauce
1 tsp sambal oelek
Sauce:
1/4 cup coconut milk ( canned )
1/4 cup soy sauce ( or coconut aminos )
3 tbsp coconut sugar
4 cloves garlic ( minced )
1 tbsp rice wine vinegar
1 tsp ginger ( minced )
1 tsp sambal oelek
Stir Fry:
9 oz rice noodles
2 tbsp coconut oil
8 oz white mushrooms ( sliced )
1 cup broccoli florets
3 scallions ( sliced into 2-inch pieces )
Toppings:
sliced scallion
roasted peanuts
lime wedges
