Flavorful creamy white chocolate & strawberry cashew cheesecake layered with a chewy chocolaty date nut base. The cutest and easiest little mini no bake vegan desserts!

1 cup of pitted Medjool dates
¾ cup of almonds
¼ cup pecans
¼ teaspoon vanilla
2 Tablespoons of cacao powder
2 tablespoons of melted coconut oil
Pinch of Himalayan salt
FILLING:
2½ cups of cashews, soaked for 4 hours, drained and rinsed
½ cup of maple syrup
6 Tablespoons of coconut oil melted (or cacao butter, melted)
2 Tablespoons of Tapioca Flour Coupons
½ cup almond milk
½ teaspoon Himalayan salt
