Crazy Spaghetti Squash Tofu Pad Thai

You need:
1 medium sized spaghetti squash
1/4 cup chopped green onion
1/8 cup chopped cilantro
1/2 medium red onion chopped
1 package of bean sprouts
1 block of extra firm tofu, pressed to remove the water and chopped into little cubes
2 tablespoons of olive oil
Cooking spray
1 cup chopped mixed peppers (red, orange, yellow)
2 eggs
1 piece of fresh garlic, crushed
For the sauce (basic peanut sauce):
2 tablespoons peanut butter
juice from 1/4 lime
3 tablespoons of soy sauce
1 tablespoon of Sriracha
2 tablespoons of sugar (your choice)

Preheat the oven to 400. Cut the spaghetti squash in half, remove the seeds and brush the inside with 1 tablespoon of olive oil. Bake for 40-45 minutes or until the squash comes out in strings. Remove it...
