Edamole (Edamame Guacamole)

Edamame is so good, and so good for you. This recipe substitutes edamame for avocado, giving it a slightly lighter and fluffier texture than regular guacamole, and the added high fiber, high protein, and low fat just make me even hungrier for more of that edamole!

3/4 cup frozen shelled edamame, thawed
3 tablespoons water
2 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon hot pepper sauce - can omit
1 garlic clove, halved
1 Roma tomato, diced
3 tablespoons water
2 tablespoons extra-virgin olive oil

1 Roma tomato, diced
Combine all ingredients except for the tomato in a food processor until smooth.
Add the diced tomato and stir gently.
Cover and chill.
Serve with toasted pieces of pita, whole wheat crackers, corn chips, or veggies.
