Here is my grandma's recipe for russian golubtsy, I made it healthier! I also summerfied it with a light brown rice and lentils, instead of the traditional meat version. Healthy and delicious for a filling summer meal! ?

1 tablespoon extra virgin olive oil, plus a little for garnish
1/2 onion, chopped
2 teaspoons minced garlic
2 cups vegetable stock or water
1/2 cup brown rice
1/2 cup dried brown lentils
1 tsp cumin
Salt and freshly ground black pepper
8 large cabbage or collard greens, see below for preparation
