Lentil Loaf (gluten free)

Super delicious, meaty and aromatic lentil loaf, perfect for the Christmas dinner table or any other time of year!

1/2 cup red lentils (dry)
1/2 cup brown rice (dry)
1.75 cups water
7 oz (200 gr) mushrooms of your liking
2.8 oz (80 gr) leek
5 cloves garlic
2 stalks celery
3/4 cup oats
6 oz (170 gr = 1 can ) tomato paste
2 tsp herbs de provence (without lavender)
1 tsp salt
Dash of black pepper
1 Tbsp lemon juice
1 Tbsp brown sugar
